Ginger Bling Boys

INGREDIENTS:
3 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ground ginger
1 3/4 teaspoons ground cinnamon
1/4 teaspoon ground cloves
6 tablespoons unsalted butter
3/4 cup dark brown sugar
1 large egg
1/2 cup molasses
2 teaspoons vanilla
PREPARATION:
For efficiency, prepare your oven by moving your racks to be as close to the center as possible and bake using 2 non-stick baking sheets. With your oven racks in place, preheat your oven to 375 degrees. In a small bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, ginger, cinnamon and cloves until well blended. In a larger bowl, mix butter, brown sugar, and egg until well blended. Then pour in molasses and add the vanilla and continue to mix until well blended. Gradually stir in dry ingredients until blended and smooth. Make a work area on your counter. Spread wax paper on your counter and tape it in place (you’ll thank me later). On the wax paper spread a generous amount of flour. Take a big handful of dough out and plop it on the flour and sprinkle more flour on top of the dough. Use a rolling pin and roll the dough out until it’s about 1/4 inch high. Apply more flour if the dough sticks to the rolling pin. Use your favorite cookie cutters to cut out cookie shapes. (For Bling Boys, you’ll want to use a gingerbread man cutter.) Space cookies at least an inch apart. You should be able to get 6-10 cookies per sheet based on how big your cookie cutter is. Bake 2 sheets at a time for 7-10 minutes. Keep an eye on the edge of the cookies; when they turn a nice warm brown, they’re ready! (Note: If you find that your oven isn’t evenly cooking your cookies, you may only be able to bake 1 sheet at a time.) Wait about 2-3 minutes and then transfer your cookies to a wire rack for cooling. After all the cookies are baked, carefully lift the tape and roll the wax paper with the flour into a tube, tuck the ends, and dispose in the trash. The most fun part of the activity is decorating the cookies. Once the cookies are cool, you can begin BLING. While candies and frosting are more than adequate decoration, you can really maximize your BLING, using food color and fondant. Start with white fondant and then mix some beautiful colors. Roll out your fondant into a thin sheet about 1/8-inch thick and then design and cut out fantastic costumes that express your creativity and personality.
